I love adding chives to my mashed potatoes and to biscuits and breads, but I hate freezing the leaves whole for winter use. One method that works best for me is to gather the chives in the summer, wash them, and chop them up. I then fill ice cube trays with about a tablespoon of chopped chives and add enough water to cover, about a teaspoon. Freeze. I then store the chive cubes in a large plastic container for winter recipes.
